Whisk in orange blossom water. Sift one-third of the flour mixture on meringue and gently fold through using a balloon whisk. Repeat with remaining flour mixture in batches. If your whisk is tear-dropped, you can still use it, just take care to use a gentle folding action. Transfer one-third of the cake mixture to a medium bowl and fold in raspberry puree. Carefully fold raspberry mixture into remaining cake mixture, swirling to create a marbled effect. Spoon mixture into an ungreased tubular 25cm angel food cake pan with a removal base, smooth surface.
Bake cake for 30 minutes or until cake springs back when pressed lightly with a finger.

Place a piece of baking paper, just larger than the pan on a work surface. Immediately turn hot pan upside-down on the paper and leave to cool completely in this position. You may need to run a spatula around the cake to release it. Make orange blossom icing. Sift icing sugar into a small bowl and stir in orange blossom water and enough of the juice to form an icing the consistency of honey.
For a more pronounced flavour, use a middle eastern brand of orange blossom water. Drizzle cooled cake with icing and decorate with flowers or fresh raspberries. They turned out beautiful! It's very hard to attempt to make them into a flower shape without the press. The raspberry Jell-O gives the cookies a wonderful color and taste. When I read the recipe for the first time, I thought no way am I going to cut each one with a knife. And wallah!
I take them out of the cutter gently and place them on a tray open them slightly and put about 5 gold dragees in them and bake. They are a hit and make the cookie trays look fantastic.

These cookies were really yummy. I used a cookie press for mine. I'll try another flavor next time. I recommend you freeze the balls for min. I also noticed after adding flour, the red wasn't so vibrant, so I added red food color. I would suggest use sugar free jello, too sweet, but very pretty. I used cranberry jello and loved the taste, but there is NO way the cookies in the photo were from cutting and separating the dough. I tried it several ways and they don't really hold their shape -- you would need a cookie press to make these look pretty.
Still, I'm going to use the jello in a cookie idea for some other flavors -- very cute idea. Since you're making a batter, this might be a good cookie press cookie. I'd chill the batter then press out the shapes. My cookies usually turn out beautifully, but I had a really difficult time with these.

The batter was very sticky even after a little exra flour. I followed the directions carefully, but my cookies did not look anything like the shape they do in the picture above.
They turned out very small, round, and puffy The taste was OK but definitely nothing I would crave. Hope you have better luck than I did if you try the recipe! But I know what I did wrong. There is a knack to this and I'm going to try again. I also switched the flavor to black cherry thinking it would be a better red, the color was fine but the flavor was yuck, to me anyway, my husband liked them. I also recommend not spreading the wedges out, I did and my cookies were round and flat. But the idea is brilliant! They would make a beautiful Christmas cookie.
I will try again. And I think I'm going to stick with the sugar cookie concept and not use the geletin flavor, just use food coloring. I also tryed to make these cookies. They came out round cookies with none of the design. So I made whoopie pies out of them! They had a great taste! I dont know why they didnt stay in shape.

These were pink, not red, but that is ok. I used a knife and mine came out fine, but no where near as sharp edged and nice looking as the display photo. Taste was just ok in my opinion, though my kids thought they were delicious! Once I got the hang of cutting them, they turned out better.
